So, not gonna lie, I totally ganked this off Pinterest. The stuffed dates can take a smidgen of time to prep for, but I swear to you: it’s worth the wait! This picture was from a party at my friend Brooke’s house(ever hear of Pure Romance?) and we were a bunch of hot and bothered gals looking at adult toys, so something sweet and salty and meaty was just right. Accented with the finest of maple syrup and some vibrant cilantro for a surprise kick, I absolutely suggest making a few extra, a pound of bacon can usually make around 24. There are tons of variations on stuffed dates, but this one just makes so much sense!
You will need:
- About 24-30 medjool dates, sliced open once along the side
- 1# cooked ground chorizo(skin removed) in a bowl.
- 1# bacon, thick. Stack high and cut evenly in half.
- Tooth picks
- roughly chopped cilantro
- maple syrup, is small bowl
Preheat oven to 365 degrees. Line up chorizo, opened dates, bacon, and toothpicks along side an aluminum lined baking pan. Grab a date, stuff it generously with chorizo, then wrap tightly with the bacon and secure tightly with a toothpick. Set on pan, evenly spaced about 2 inches apart. Bake at 365 for about 15 minutes, then pull the pan out and carefully flip each bacon wrapped date over and bake 5 to 8 more minutes. Remove from oven once again, and douse the little bundles in the maple syrup, let excess drip off, and place on baking sheet and cook 5 more minutes. Remove, set on platter(lined with kale or green leaf lettuce) and sprinkle chopped cilantro evenly. Enjoy!
